Matcha Crepes Stuffed with Grilled Peaches, Whipped Cream, and Sliced Almonds

Ingredients:

For the Matcha Crepes:

  • 1 cup all-purpose flour
  • 1 1/2 cups milk
  • 2 large eggs
  • 2 tablespoons melted butter
  • 1 tablespoon sugar
  • 1 teaspoon matcha powder
  • 1/4 teaspoon salt

For the Filling:

  • 3 ripe peaches, sliced
  • 1 tablespoon honey
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Sliced almonds, for garnish

Instructions:

Matcha Crepes:

  1. In your Salton WizNMix with the Multi-Knife inserted, combine the flour, milk, eggs, melted butter, sugar, matcha powder, and salt. Blend until smooth.
  2. Let the batter rest for at least 30 minutes in the refrigerator.
  3. Preheat your Salton Crepe Maker.
  4. Pour a small amount of batter into the included batter dish, pressing down in the centre to spread evenly. Cook for about 1-2 minutes until the edges start to lift. Flip and cook for an additional 30 seconds. Repeat with the remaining batter.

Grilled Peaches:

  1. Preheat a grill to medium-high heat.
  2. Brush peach slices with honey. Grill for 2-3 minutes on each side until grill marks appear.

Whipped Cream:

  1. In your WizNMix bowl with the Cyclone Bulb inserted, whip the heavy cream until soft peaks form.
  2. Add powdered sugar and vanilla extract. Continue whipping until stiff peaks form.

Assembling:

  1. Lay a crepe on a plate.
  2. Place a few grilled peach slices in the center of the crepe.
  3. Add a generous dollop of whipped cream.
  4. Fold the crepe around the filling, creating a pocket.
  5. Garnish with sliced almonds.
  6. Repeat with the remaining crepes.
  7. Serve and enjoy these delightful matcha crepes as a sweet treat!

Note: Feel free to drizzle extra honey or sprinkle more sliced almonds on top for an extra touch of sweetness and crunch.

1/2 cup (125 ml)        raspberries (frozen, if desired)
1/2 cup (125 ml)        blueberries (frozen, if desired)
1/4 cup (60 ml)         pomegranate seeds
1 serving                     unflavoured or vanilla (unsweetened) whey protein powder*
5                                   cashews

  2.    Secure the lid.
  3.    Set the speed control to the lowest speed and turn the blender on.
  4.    Slowly increase the speed to the highest setting and blend for about 1 minute.
