Chicken Curry and Rice Recipe

Ingredients:

 For the Rice:
1 cup of white rice
2 cups of water
Pinch of salt

 For the Chicken Curry:
1 lb (450g) of chicken breast, cut into bite-sized pieces
2 tbsp oil
1 onion, finely chopped
2 cloves garlic, minced
1 tbsp ginger, grated
1 tbsp curry powder
1 tsp turmeric
1 tsp cumin
1 tsp coriander
1/2 tsp chili powder (optional)
1 can (14 oz) of diced tomatoes
1 cup coconut milk
Salt and pepper to taste
Fresh cilantro for garnish

Instructions:

1. Cook the Rice:
- Rinse the rice under cold water until the water runs clear.
- In a pot, bring 2 cups of water to a boil. Add a pinch of salt.
- Add the rice, reduce heat to low, cover, and simmer for about 18 minutes or until the water is absorbed and the rice is tender.
- Fluff with a fork and set aside.

2. Prepare the Chicken Curry:
- Heat the oil in a large pan over medium heat.
- Add the chopped onion and sauté until translucent.
- Add the minced garlic and grated ginger, and sauté for another minute.
- Stir in the curry powder, turmeric, cumin, coriander, and chili powder (if using). - Cook for 1-2 minutes until fragrant.
- Add the chicken pieces to the pan and cook until they are no longer pink on the outside.
- Pour in the diced tomatoes and coconut milk. Stir to combine.
- Season with salt and pepper to taste.
- Bring the mixture to a simmer and cook for about 20 minutes, or until the chicken is cooked through and the sauce has thickened.

3. Serve:
- Plate the cooked rice and top it with the chicken curry.
- Garnish with fresh cilantro.
