It's a Swiss tradition built for sharing. Everyone melts cheese in their own little pan under the heating element, then scrapes it over potatoes, charcuterie, pickles and vegetables, while meat and veggies sizzle on the grill top.
Raclette cheese is the classic. Gruyère, fontina and gouda also melt beautifully. Plan on about 150 to 200 g (5 to 7 oz) of cheese per person for a full meal.
Give it 10 to 15 minutes so the grill top is hot when guests start cooking.
